A French classic with a rather lovely story behind it. Tarte Tatin is said to have been created by the Tatin sisters, Stéphanie and Caroline, at their hotel in the Loire Valley, when apples were caramelised in butter and sugar before being finished with pastry and turned out warm.
Ours follows the same spirit: deeply caramelised seasonal Apples, buttery pastry and all the comfort of a favourite winter pudding. It’s one of those dishes we look forward to as the nights draw in.
Best served warm, with Cream, Crème Fraîche or a generous spoonful of Vanilla Ice Cream.
